1. Tofu oatmeal coconut cookies

    oatmealtofuClick on top title to open and scroll Tofu is a great source of low-fat protein. It’s a staple for many vegans but for many of us cooking with tofu is a mystery. That is why I was thrilled to find this recipe for tasty oatmeal cookies created by House Foods America. The recipe is vegan and easy to make. Best of all it doesn’t call for any hard-to-find ingredients.

    ½ package House Foods Premium or Organic Tofu Soft

    1½ cup all-purpose flour

    1½ cup old fashioned oats

    ¼ cup brown sugar

    ½ cup granulated sugar

    ⅓ cup vegetable oil

    ½ cup coconut flakes

    1 tsp vanilla extract

    ½ tsp baking powder

    ½ tsp salt

    Add tofu, sugar, oil and vanilla to food processor and purée until smooth. Set aside.

    In a large bowl, whisk together flour, oats, baking powder, salt, and coconut, and combine them with the wet ingredients. Mix thoroughly and place in refrigerator for one hour to firm.

    Drop 2 tbsp. of dough onto a greased baking sheet or parchment. Cover the baking sheet, placing the cookies two inches apart. Repeat for remaining cookie dough. Bake for approximately 20 minutes at 350 degrees F.
