Alice’s quick company soup

We loved this quick and elegant tomato and artichoke soup. It’s delicious and low-calorie, too. Try it one of these hot summer nights. All ingredients are approximate, depending on your taste. This soup is good cold in summer and hot in winter. It’s a breeze to make — and it’s fast! Company loves it.

 
1 can of tomato juice or one large can of tomatoes
1 carton of chicken broth
1 can of artichokes (not pickled) or 1 cup frozen defrosted artichokes.
1 bunch of dill (the amount depends on how much you like dill and how fresh it is. Dried dill doesn’t work.) If the dill is very fresh, I use a few sprigs — or all of the package — the packages with the plastic covers.
1clove of crushed garlic (optional)
 
Put artichokes and dill with a bit of tomato juice and pulverize it in the food processor or blender. Add everything else, and serve cold or heated. Add salt and pepper to taste.
 
Other variations:
 
Add hot sauce
Use Clamato juice, or spicy tomato juice
 
Top with sour cream or yogurt, if desired. But, my advice is to try the basic recipe first and then see what you would like.
