Naturally sweet golden beets

If you think you hate beets, but haven’t tried them since you were a kid, try this simple and easy side dish that healthful and delicious. It uses golden beets, not the usual red variety, and has converted many a beet hater. 

Preheat your oven to 375f/180c
Peel one large golden beet per person
Cut the beets into slim segments – like an orange
Place the beets in the middle of sheet of foil large enough to wrap them
Toss them with a small amount of olive oil. Use just enough to coat them. Start with 1 tsp and add.
Season with salt, pepper and one clove of garlic
Add a shake or pinch of cayenne (optional)
Wrap the beets in foil and bake them on a sheet pan for about 30 minutes, or until tender.
