Roasted corn

My husband loves fresh corn; he just adores it. As soon as it comes in I cook it several times a week. If you watch cooking shows you will often see corn roasted on the BBQ. It looks delicious. I think roasting is the best way to cook corn anytime, but it doesn’t require a BBQ or grill. This is dead simple, but as many of my friends have asked me how to do it, I thought I‘d share it here. Preheat your oven or even a toaster oven. Often I use a toaster oven when I am only cooking the corn and do not want to heat up the kitchen. If you love corn try it. Put the corn in as you start cooking; it takes about 20 minutes for a fresh ear.

 
Shuck and clean the corn
Oil it with good olive oil, use a scant amount
 
Season with kosher sea salt and pepper, and wrap in parchment or wax paper and then foil.
Roast in an F375 C190 oven for 20 to 25 minutes (you can keep the corn warm in the oven longer.)
 
Variations:
Season with seasoning salt
Add a sprinkling of chili flakes and fine grating of cheddar or jack cheese
Add a fine grating parmesan cheese and a little oregano
