A flatbread appetizer, or a fancy pizza

Sweet, savoury, and crisp --perfect with drinks.This has become one of our favourite and most popular appetizers. I also serve it as a quick supper with a salad. It is easy to make, with good prepared pizza dough that’s available from so many places these days. The secret is lots of well-caramelized onions, and a hot oven. We love it with figs or sundried tomatoes.  You can caramelize the onions the night before. They will take about an hour on low heat to  caramelize properly, stir them occaisonally. This is perfect for entertaining vegetarians too!

Preheat the oven to 474 f/225c.
1 pkg. prepared pizza dough – not pre-rolled or the biscuit type.
3 large onions
Fresh figs: 8 medium or 6 large, or ¾ cup sundried tomatoes in oil
Cheese: ½ cup blue cheese crumbles or ½ cup of fresh grated parmesan or grano pando cheese, or a mixture.
Optional: Chili flakes and dried oregano
Three large onions, thinly-sliced and caramelized to a nutty brown. Cook them slowly with a little good olive oil over low to medium heat. Add 1-2 tsps. of sugar if necessary towards the end. Salt lightly when brown. Cool. This may be done in advance.
Wash, hand-dry, and slice enough fresh figs (about 6 large or 8 medium) to cover a pizza. Or, use about ¾ sundried tomatoes which have been drained of oil.
Follow directions on dough for rising.
Cover the bottom of your pizza pan with cornmeal or a little flour – cornmeal is better. Lightly-flour your hands and pat out the dough.
Top with: Onions, figs or tomatoes and then sprinkle on the cheese. Add chili flakes and organeo to a tomato pizza, if desired, to taste. Bake about 20 minutes until golden brown.
Slide the baked flatbread off the pan and cut it with a pizza cutter into small pieces. Serve hot.
