Quick and easy black cod with toasted sesame and crispy onions

Moist and mild in flavor black Cod is a crowd pleaser

Black cod or sable fish is a delicious, buttery-tasting mild white fish. Like baby cod it flakes easily and is moist but it is not endangered. This is wonderful fish for fish lovers and those who are less enthusiastic. It is also not “too fishy-tasting.” 

Black cod is also a great fish to cook when you don’t have a lot of time to fuss. It doesn’t require a lot of work to taste good. 

This recipe used a pre-blended spice mix from the McCormick Gourmet Collection Toasted Sesame and Garlic Chicken. These packets are not the most economical way to buy spice, but they are convenient if you don’t have a kitchen full of spices. They can also inspire a novice cook. 

Preheat your oven 425F/220C 

2 Tbsp. McCormick Gourmet Collection Toasted Sesame and Garlic Chicken 

(Or 2 Tbsp. toasted sesame seeds black and while mixed or whatever you prefer. 1 tsp. ginger powder.

1 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. sugar and ½ tsp. sea or kosher salt. The spice mix has fried vegetables that in my opinion add little flavour.)

 

Add the spices to:

 

1½ Tbsp. regular or low-call mayonnaise

2 tsp. Kadoya Hot Sesame Oil or any Sesame oil with ½ tsp. cayenne pepper

2 tsp. lemon oil (gourmet strongly lemon flavoured olive oil)

Mix thoroughly and lightly coat fish

Place the fish in a foil-lined pan

This may be done in advance

Top the fish with Asian deep fried onion or red shallots.

 You can find these onions the Asian section of the grocery store or at an Asian market the label will say “fried onions or fried red shallots”. They make a great crispy topping with very few calories. In a pinch you can use American canned fried onions but they are not as light, low in calories or tasty.

Bake in hot preheated oven for 20 minutes
