Quick chicken fricassee

Easy and elegant chicken

This surprisingly elegant dish can be made in a fraction of the time it takes to make a classic chicken fricassee — or chicken in wine sauce. The secret is a precooked BBQ chicken from the store. Pick up the ingredients when you do your marketing. There are only a few ingredients, so it’s snap to toss together for a cozy winter dinner or important guests.
 
Slice and separate into rings 1 large onion
Mince  2 cloves of garlic by hand or with a garlic crusher
Cut one BBQ chicken into serving pieces — or just buy the pieces you like. There should be 4-6 pieces.
Sauté the onion slowly and it brown – do not let it burn.
Add 1½ tbsp of flour to the pan and reduce heat. Cook for 2 minutes – stir.
Add 1½ cups of good white wine
Stir and scrap the bottom of the pan.
Add 2 cups of chicken stock
Add 1½ tsp of sweetener of your choice
Add fresh thyme leaves from several springs or ½ tsp dry thyme
1tsp to kosher salt
Simmer on a medium heat for 20 minutes
Correct seasoning – add black peeper if you like it.
 
In another pan, sauté ¾ cup small button mushrooms or sliced white or brown mushrooms with 1 clove of minced garlic.
Sauté for about 4-5 minutes
Place the chicken pieces and mushrooms in a deep casserole and cover with the sauce. Cover casserole.
Place in oven for 1 hour at 325 F/150C.
Garnish with fresh herbs
