Arugula, watermelon, and mint salad

Fresh salad of peppery greens with a hit of fresh mint! This light bright salad is one of my summer favourites. It is low in calories due to the oil dressing, and it is delicious. Add a ¼ cup of feta cheese or a tablespoon or two of hemp seeds to the salad to make it a light and healthful lunch. Watermelon and tomatoes are full of lycopene, which is full of anti-aging benefits. It’s also very good for your skin.
