    This salmon topped with pesto is very easy to make. The basil complements the fish, and the crispy shallots add a lot of crunch for very few calories. It is perfect for a fast weekend day dinner.
    Preheat oven to 425F/200C
    For two:
    Place in bag:
    1 boned and skinned salmon fillet, lightly seasoned with salt and pepper.
    Spread with homemade our store bought Pesto (1½ tbsp.).
    Just toss the bag away for easy clean up.Top pesto with 1 tbsp. crispy fried shallots (from the Thai section of the grocery), optional.
    Close bag and bake 18 minutes for 2 inch/ 5 cm thick fillet.
